The taste is so pure and makes you feel good inside knowing you are eating something great for you! You can easily add or change what greens you want to put in the soup and with a little salt, pepper and Hamama Microgreens, it's perfect! Ingredients: 1 bunch Asparagus (chopped) 1 bunch Cilantro (chopped) 1 bunch Spinach (chopped) 8 large Garlic cloves (chopped) 1 large Onion (chopped) 1 large Fennel Bulb (chopped) 1 bunch Kale (chopped, I used dark kale) Handful of Fennel Fronds (chopped) Handful of Microgreens (your choice, I chose Broccoli) 4 Celery Stalks (chopped) 5 Cups Vegetable Stock (could substitute with water or other broth) 1 Tbsp Coconut Oil Garnish: Hamama Microgreens (I chose Cabbage for a beautiful color contrast) Nuts, Seeds, Salt and Pepper Lime (squeezed if you want a little extra flavor) Instructions: Heat the coconut oil in a soup pot, add the onion, garlic, asparagus, fennel and celery stalks and cook for 10 minutes over low heat. Add the vegetable stock, bring to boil and simmer over low heat for 10 minutes. Add the kale, spinach, cilantro, fennel fronds, microgreens and set the heat to low. Use your immersion blender or regular blender to puree the soup. Add more vegetable stock to adjust the texture. Serve warm, topped with toasted nuts and seeds, salt and pepper to taste and of course your Hamama Microgreens! :D Make this recipe today! GROW MICROGREENS NOW
