Asian-Style Slow Cooker Beef Short Ribs

Try these super flavorful short ribs made easily in your slow cooker! The sweet & spicy sauce glazes the incredibly tender meat ... serve it family style over rice to make everyone happy!

 

Ingredients:

  • 1/2 cup reduced sodium soy sauce or Tamari (gluten-free option)
  • 1/2 cup beef broth
  • 1/4 cup brown sugar or coconut sugar, packed
  • 4 cloves garlic, minced
  • 4-6 Carrots, peeled and sliced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon crushed red pepper flakes or sriracha, optional
  • 5 pounds bone-in beef short ribs, cut crosswise into 2″ pieces
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped fresh cilantro
  • Green onion / Scallions, sliced
  • Hamama Microgreens (I recommend fenugreek or radish)
  • 1 teaspoon sesame seeds
  • Freshly prepared Rice

Instructions:

  1. In a large bowl, whisk together the soy sauce, beef broth, brown sugar, garlic, ginger, sesame oil and red pepper flakes / sriracha. Place the short ribs into a 6-qt slow cooker (can also use an Instant Pot). Stir in soy sauce mixture until well combined. Add carrot slices.
  2. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  3. In a small bowl, whisk together the cornstarch and about 1/4 cup water. Stir the mixture into the slow cooker. Cover and cook on high heat for an additional 30 minutes, or until the sauce has thickened.To test for doneness, pull on a bone as it should slide out freely.
  4. Serve immediately over freshly prepared rice or coconut rice (just swap coconut mil for the water when cooking!) and garnish with cilantro, green onions, microgreens and sesame seeds! Add more sriracha for heat if desired :)
