BBQ Chicken Cauliflower Crust Pizza

To be honest, I love Hamama microgreens on any kind of pizza but one of my absolute favorites is this zippy BBQ chicken version! With smoky bacon, tart pineapple, sweet & sticky BBQ sauce, fresh cilantro & gooey cheese, this pizza will satisfy all of your taste buds without weighing you down!



Ingredients:

- Cauliflower pizza crust: homemade (Recipe from the Food Network) or store bought. You can also substitute for your favorite pizza crust!
- About 1/3 cup of lower sugar BBQ sauce 
- Red Onions- sliced thinly  -2 TBSP green onion for garnish)
- ⅓ cup of Carrot Shreds  
- 1 clove of fresh Garlic, crushed 
- ¼ cup of Fire Roasted Corn

- 1/4 cup of canned or fresh pineapple, diced 
- ½ cup of Cooked & diced chicken breast
- Shredded Mozzarella & Parmesan Cheese to taste - I add just a tad to mine
- Fresh jalapeno slices to taste

Garnishes after baking:
- Fresh cilantro
- Hamama microgreens (love the Zesty Mix with this)
- Green Onion
- Cooked Bacon, broken into small pieces- 2 strips


Instructions:

  1.  Bake your pizza crust according to instructions (My cauliflower crust needs to bake on both sides before adding toppings, then baked briefly again after adding)!
  2. Spread BBQ sauce & fresh minced garlic on your crust.
  3. Add your toppings! Cheese, red onion slices, carrot shreds, roasted corn, cooked chicken breast, pineapple, and fresh jalapenos
  4. Bake until toppings are hot & cheese is melted
  5. Load up with fresh cilantro, green onions, crumbled bacon, and your fave Hamama Microgreens!! You could totally throw on some fresh avocado slices too, mmm!
