It has the perfect amount of richness and creaminess, while staying silky and light. It’s the perfect soup for chilly evenings! Ingredients: 2 Tablespoons butter 1/2 cup onion, chopped 1 cup carrot, finely chopped 1-2 celery sticks, finely chopped 1 Tablespoon garlic, minced 4 cups chicken broth 2 large baking potatoes, peeled and chopped 1 Tablespoon flour (I used gluten free) 1/2 cup water 2/3 cup milk (could substitute light coconut milk) 2 cups broccoli, chopped 2 cups cheddar cheese, shredded Handful of your favorite Hamama Microgreens, for garnish (I used broccoli) Instructions: Melt the butter in a large soup pot. Add onions, carrots, and celery and saute over medium heat until tender. Add garlic and cook 1 or 2 additional minutes. Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender. Mix flour with water, add, and simmer until soup is slightly thickened.
