Recipe: Chickpea “Breaded” Chicken Parmesan Author: Allie, Happiness Team Member Prep Time: 15 Mins Cook Time: 15 Mins Makes: 4-6 Servings I was inspired to make this dish for "Happiness Happens" week because it is a warm and comforting meal, served family style. Its bright colors make people smile and its decadent flavors & healthy ingredients make bellies happy My version of chicken parmesan uses the delicious traditional elements but makes it a bit healthier & gluten free! The best is that it shouldn’t take you more than 30 minutes to make! This dish is especially great when served with my Rainbow Sharing Salad! I hope you love it <3 Ingredients: 1 lb-1.5lb boneless chicken tenders (or chicken breasts, butterflied). ½ cup olive oil, for coating the chicken 2 cloves of garlic, minced 1-1 ½ cups Chickpea breadcrumbs (I used Watusee brand Organic Chickpea Crumbs & I found them right by the regular breadcrumbs in my local grocery store). 1 Tbsp italian seasoning (or just dried basil / oregano) 1 Tsp garlic powder 1 Tsp onion powder ¼ cup grated parmesan cheese Dash of red pepper flakes (optional) Sea salt to taste Black pepper to taste 1 24 oz jar of your favorite Marinara Sauce 4 oz fresh Mozzarella, sliced 12 oz gluten free spaghetti pasta - I use a brown rice/quinoa blend Fresh basil leaves Hamama Refreshing Cabbage Microgreens (or whatever you have on hand) Instructions: Preheat oven to 400 degrees F. Line baking sheet with parchment paper. Prepare a pot of boiling water for the pasta. In a medium bowl, mix olive oil and minced garlic (sometimes I add fresh lemon zest to this too)! In another medium sized bowl, mix together chickpea crumbs, parmesan cheese & seasonings. Dip each chicken tender one by one into the olive oil mixture, then coat both sides with chickpea breading. Place on prepared baking sheet. Bake the chicken for 15- 20 minutes, flipping them halfway through. These don’t take long to cook, but it depends on the thickness of your chicken. Cook until internal temperature reaches 165 degrees F. For the last 5 minutes, top each chicken tender with a heaping spoonful of marinara and a slice of fresh mozzarella cheese. You can broil for a minute to brown the cheese to golden perfection. While the chicken is baking, boil the pasta per instructions & heat the marinara sauce in a pot. To serve- dish out a serving a pasta, add marinara sauce to taste, top with chicken parmesan and garnish with fresh basil and cabbage microgreens! Serve with a side salad to complete the meal. Enjoy!
