Seasoned pan-seared chicken with umami mushrooms and a nice creamy finish. It's delicious, especially when served over rice or pasta. This is one recipe you'll make time and time again! Ingredients 1 lb chicken tenderloins 1 tsp ground pepper ½ tsp salt 1 tsp paprika 1 tsp garlic powder 1 tbsp olive oil 1 tbsp butter 2 cloves fresh garlic, minced 2 cups oyster mushrooms, torn into strips ½ cup heavy cream ½ cup grated parmesan cheese ½ cup grated mozzarella cheese 1 cup chicken broth Cooked pasta or rice for serving Instructions: Coat the chicken tenderloins in pepper, salt, paprika, and garlic powder. Add oil to a medium-heat pan and cook chicken for 3 minutes on each side. Remove chicken and add butter and garlic to the same pan. Saute the garlic for 1-2 minutes then add shredded mushrooms. Toss and cook down for 2-3 additional minutes. Stir in heavy cream, cheese, and chicken broth and simmer for 2 minutes. Add the chicken back into the pan, cover and cook on low-medium heat for an additional 10 minutes. Serve on its own, over pasta or with rice. Top with your favorite fresh microgreens & enjoy!
