This easy black bean and corn salad is sweet, salty, hearty and the perfect addition to your summer get-together! Enhanced with Hamama Earthy Clover microgreens to take the flavor to the next level - plus the added boost of healthy nutrients! You can enjoy this salad as a standalone side dish or serve up with some crunchy blue corn tortilla chips! Ingredients: 1 can of black beans, drained & rinsed 1 can of sweet corn, drained 1 can of garbanzo beans, drained & rinsed ½ cup red onion, diced 1 yellow bell pepper, diced ½ cup cherry tomatoes, sliced in half 1 avocado - optional Himalayan salt - to taste Freshly ground black pepper - to taste 1 tablespoon of agave nectar - optional Instructions: Thoroughly drain and rise 1 can of black beans, 1 can garbanzos, and 1 can of sweet corn - add them to a large mixing bowl Chop ½ cup of red onion Dice 1 yellow bell pepper Slice ½ cup of cherry tomatoes in half Stir all the ingredients in your mixing bowl, add himalayan salt and freshly ground black pepper to taste. Optional: Add in 1 tablespoon of agave nectar to enhance the sweetness of the salad.
