This fresh fig salad with toasted pine nuts, mixed lettuce, microgreens and a flavorful vanilla-balsamic vinaigrette is perfect for early autumn gatherings. It’s beautiful, healthy and all around delicious!
Ingredients:
- 6-8 figs, stems removed, quartered
- ½ cup pine nuts, toasted
- 5 oz mixed lettuce, including arugula
- ¼ cup sweet onion, thinly sliced
- 1 cup microgreens
- 10 basil leaves, lightly chopped
Vanilla-Balsamic Vinaigrette:
- ¼ tsp vanilla extract
- 2 ½ tbsp balsamic vinegar
- 1-2 tsp maple syrup
- 3 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Instructions:
- In a small skillet over medium heat, add the pine nuts and toast for 5-6 minutes, stirring occasionally. Let cool when ready.
- Prepare the vinaigrette: Add all dressing ingredients together and mix to combine. Set aside.
- Combine your pine nuts, figs, mixed lettuce, onion, microgreens and basil into a large bowl. Drizzle the vinaigrette over the top, mix to combine and enjoy!
