It’s probably no secret that Hamama’s Hearty Broccoli microgreens are seriously my favorite flavor of our Seed Quilts! Have you tried my Broccamole recipe? Or maybe my Broccoli Power Slaw? 🥦🥗

I find myself adding my broccoli microgreens to pretty much everything… on top of my kale & quinoa burgers, adding them to salads of course, and even just munching on them for a quick and healthy snack. 

I’ve been including more protein in my diet recently and I’m ALL about the easiest and simplest method when cooking - (i.e. I’m not a chef!). I prefer to save time and make things convenient, what can I say?! 🤷‍♀️

The next time you’re running late, or maybe you forgot to eat and need something quick & easy that’s packed with protein and good fats 🥑 to keep you full, plus loaded with flavor - try this salad!

For those of you eating keto, this salad fits the bill at only 5.5g of net carbs and 10.3g of protein - (make sure to check your individual labels).

Grab your favorite salad bowl and let’s get started prepping this yummy meal!

 

Ingredients: 

  • 2 cups organic spring mix
  • 1 pasture raised hard boiled egg, sliced
  • 1 hearty handful of Hamama Broccoli microgreens
  • ½ small organic avocado, sliced
  • 1 tbsp roasted & unsalted sunflower kernels
  • 2 tbsp organic aged balsamic vinaigrette
  • Freshly ground black pepper

Instructions:

  1. Add spring mix to salad bowl.
  2. Slice hard boiled egg and gently nest in the middle of salad greens.
  3. Slice avocado and add to one side of bowl
  4. Garnish the other side of bowl with 1 hearty handful of broccoli greens
  5. Drizzle with balsamic vinaigrette
  6. Sprinkle with sunflower kernels
  7. Top with freshly ground black pepper
  8. Enjoy the visual feast before consuming the goodness! Commemorate the moment with a photo if desired! 


Tip: You can also add olives - (kalamata are one of my favs!) to the salad for an additional good-fat boosting bonus.
