Japanese Daikon Salad with Sesame Dressing

This Daikon Radish salad has a creamy sesame dressing & a fresh microgreen and seaweed garnish that gives it a truly  wonderful flavor. It’s zesty, a little spicy, tangy & it’s sure to delight your palate!

 

Ingredients:

  • ⅓ daikon radish, shredded
  • ⅕ cup fiesta radish microgreens

 

Creamy Sesame Dressing:

  • 2 tbsp ground sesame seeds
  • 2 tbsp vegan mayo
  • 1 tbsp coconut sugar
  • 1 tbsp rice wine vinegar
  • 2 tsp braggs amino acids, or soy sauce
  • 1 tsp toasted sesame oil

 

Garnish:

  • Nori, shredded
  • Black sesame seeds

 

 

Instructions:

  1. Prepare the dressing: Add all of the ingredients to a small bowl and mix until creamy and smooth. 
  2. Add the shredded daikon radish and fiesta radish microgreens to a medium-sized bowl and gently mix to combine.
  3. Lightly toss with the sesame dressing then garnish with shredded nori and black sesame seeds. Enjoy!
