Lion's Mane Mushroom Ceviche

A fun new twist on ceviche! Cooked Lion's Mane mushrooms are marinated with citrus juice, cilantro, red onion, tomato, cucumber & jalapeño. You get all of the classic flavors & textures of ceviche in this delicious vegetarian recipe. Try it for your next get together! 

 

Ingredients:

  • 4 oz Lion’s Mane mushrooms, roughly chopped
  • 1 medium tomato, diced
  • 1/2 cucumber, diced
  • 1 small onion, diced
  • 1 jalapeño (seeds removed), finely diced 
  • 1/4 bunch of cilantro, finely chopped 
  • Juice of 1 lime
  • Juice of 1 lemon
  • 1 small avocado, diced, for serving
  • Salt & pepper to taste 


 

Instructions:

  1. We recommend cooking all mushrooms before consuming.
    Coarsely chop the mushrooms. Cook mushrooms on a medium heat pan (no oil) for 3-4 minutes until golden brown.
  2. Add cooked mushrooms and diced vegetables to a bowl. Add the juice from the lime and lemon & salt and pepper to taste. Stir to combine and taste again for seasoning. 
  3. Refrigerate for 1–2 hours to let the flavors marinate.
  4. Add diced avocado just before serving. Serve with chips or on a warm tortilla. Enjoy!
