When you need to cool off and want a quick bite that doesn’t require the oven or stove, this should be your go to dish! Ingredients: 1 mango, diced 1 avocado, diced 1 yellow bell pepper, diced ½ english cucumber, diced ¼ cup fresh mint, chopped finely 1 cup Hamama microgreens Peanut Sauce: 1/2 cup smooth peanut butter 1/4 cup water plus more as needed to thin 1 tbsp honey 1 tbsp fresh lime juice 1 tsp tamari or soy sauce 2 tsp fresh ginger, grated 1 garlic clove, minced Instructions: Prepare the peanut sauce: Add all of the ingredients together and blend until smooth. Add all of your fruits and veggies to a medium bowl. Top with fresh microgreens and dressing, lightly toss and enjoy!
