Enjoy these rainbow wraps on a hot summer day; They are the perfect lunch, appetizer or snack! Ingredients: 2 -3 flour tortillas 1-2 small carrots, julienned 1 red bell pepper, julienned 1 tomato, julienned 1 cucumber, julienned 1 avocado, julienned ½ cup purple cabbage, chopped finely Handful of your favorite microgreens Hummus of your choice Peanut Sauce: 2 tbsp coconut cream ¼ cup creamy peanut butter 1 tsp rice vinegar 1 tsp Thai Red Curry Paste 2 tsp honey 2 tsp fish sauce 1 tsp sesame oil 2 tsp Sriracha 2-3 tbsp water, to thin out the sauce if needed Instructions: Prepare Peanut Sauce: Combine sauce ingredients together until smooth. Taste and adjust as needed. Assemble the Rainbow Wraps: Spread some hummus in the middle of each tortilla. Add a small amount of each veggie, including the microgreens, then carefully wrap each tortilla. With a large knife, cut the rainbow wraps in half and set aside. Arrange wraps on a platter & serve with the freshly prepared peanut sauce. Enjoy!
