Most often I prefer it warm, but when it’s too hot outside, I opt for a cold soup. This soup is filled with healthy refreshing flavors. With the cucumber and some fresh herbs and microgreens, it is sure to cool you off! Ingredients: 2 large Cucumbers (peeled and chopped) 1 cup Plain Yogurt (I like to use non dairy) 1 Tsp Dijon Mustard 2 Tbsp Lemon Juice 2 Tbsp Clover, Kale or Broccoli Microgreens 1 Green Onion (chopped, add more if needed) 2 Tbsp fresh Parsley (chopped, add more if needed) 2 Tbsp Cilantro (chopped, add more if needed) A pinch of Salt Garnish: Microgreens, Red Onion, Green Onion, Parsley, Cilantro, Salt, Pepper Instructions: Puree everything in a blender. Slowly add water to get the consistency you desire. 2. Once ready you can strain it if you want or leave as is.
