This refreshing summer salad is light and delicious, plus it makes the perfect pairing with your favorite seafood entree - I went for stuffed clams, but any seafood complements this flavorful salad featuring Hamama’s new Rainbow Radish Microgreens and our new Extra Virgin Olive Oil & Barrel-Aged Balsamic Vinegar!

Ready to grow your own microgreens at home?

Ingredients:

  • 2 c Arugula
  • 2 Persian Cucumbers, sliced
  • ½ c red onion, sliced
  • Hamama Rainbow Radish Microgreens
  • ¼ c Pepitas
  • Feta Cheese (sprinkled on top)
  • Hamama Extra Virgin Olive Oil & Balsamic Vinegar, drizzled
  • Lemon Pepper

Instructions:

1. Begin your salad by layering the arugula on the bottom of the bowl, add in the sliced persian cucumbers and red onion.

2. Sprinkle on as many beautiful Rainbow Radish Microgreens as your heart desires and top with pepitas, feta cheese and a good drizzling of Hamama’s newest product - our Extra Virgin Olive Oil & Barrel-Aged Balsamic Vinegar! #drool!

3. Top off with some freshly cracked lemon pepper and you’ve got the perfect refreshing summer salad to keep you cool and eating healthy!
