Crisp up corn tortillas, heat up some creamy refried beans , top with fresh corn salad and add some flavorful toppings like cheese and popcorn microgreens for a delicious and refreshing tostada! Ingredients: Refried beans Corn Salad with Creamy Savory Sauce Corn tortillas Olive oil, to drizzle on tortillas Garnish: Monterey Jack cheese, or any cheese you prefer Popcorn microgreens Lime juice Salsa Hot sauce Salt and pepper to taste Instructions: Add the refried beans to a small skillet. Cook on medium heat for 10 minutes until warm and bubbly, stirring occasionally. Turn heat to low to keep the beans warm until ready to use. Preheat the oven to 400° F and place the corn tortillas on a baking sheet. Lightly coat with olive oil on each side. Bake for about 5 minutes on each side, until crispy and golden brown. Set aside to cool. Arrange the tostadas on a plate or platter and assemble: Top each tostada with refried beans, corn salad, cheese, popcorn microgreens.
