The creamy spinach sauce has a punch of garlic & toasted pistachio flavor and it whips together in a breeze. Garnish with parmesan cheese and some of your favorite fresh microgreens for a great quick meal! Ingredients: 12 oz Organic Ricotta And Spinach Girasoli Creamy Spinach Sauce: 3 cups spinach 4 garlic cloves 1 small onion, chopped ⅓ cup toasted pistachios 2 tbsp grated parmesan cheese ½ tsp salt and pepper ½ cup olive oil, or more for desired consistency ¼ cup heavy cream Garnish: Hamama microgreens Parmesan cheese Salt and pepper to taste Instructions: Cook the Ricotta & Spinach Girasoli according to package instructions (around 3-4 minutes). Set aside. Add all of the Creamy Spinach Sauce ingredients [except for the olive oil & heavy cream] in a food processor. Blend, drizzling in the olive oil until you reach your desired consistency. Place a medium-sized skillet on medium-high. Add the spinach sauce along with the heavy cream, stir and let simmer for a few minutes until incorporated. Add the Girasoli and stir well until each one is coated in the sauce. Serve in a bowl or plate and garnish with parmesan cheese, fresh microgreens and salt and pepper to taste.
