Recipe: Roasted Delicata Squash Fall Harvest Salad with Sweet Maple Dressing Author: Elle, Hamama Happiness Team Member Prep Time: 10 minutes Cook Time: 30 minutes Makes: 4 - 6 Servings This delightful harvest salad is the perfectly sweet and savory way to enjoy a fall meal! Delicata squash is known for its delicate rind which is edible and tasty. This lovely winter squash is versatile for all kinds of cozy seasonal dishes and is especially delicious as a salad adorned with toasted pecans, pomegranate arils, crumbled goat cheese and Sweet Maple Dressing drizzled on top. Ingredients: 2 Delicata Squash 4 cups spring mix ½ small red onion, thinly sliced ⅛ cup toasted pecans ⅛ cup pumpkin or sunflower seeds ½ cup pomegranate arils ¼ cup goat cheese crumbles - (omit to make this dish vegan) ½ cup maple syrup Fresh ground black pepper Pink Himalayan sea salt Hamama Refreshing Cabbage microgreens Instructions: Preheat the oven to 400 degrees. Clean outside of squash thoroughly - the skin is edible! Cut off both ends from squash, and slice squash in half, lengthwise Using a spoon, scoop out the seeds from all 4 halves Cut into ¼” pieces, making “half-moons” and line on a baking sheet Brush each piece of squash with ½ tsp maple syrup and ¼ tsp olive oil Season with salt and pepper Roast in oven for 15 minutes, flip pieces and roast for another 15 minutes until skin is lightly browned and crisp Prepare dressing while squash is roasting Sweet Maple Dressing Ingredients: ¼ cup apple cider vinegar ½ cup olive oil 1 tbsp Dijon mustard 3 tbsp maple syrup Salt and pepper to taste Dressing Instructions: Add all ingredients to a glass jar Shake until thoroughly combined Store in fridge for up to 2 weeks Prepare Salad: Assemble salad greens in a large bowl and add warm squash pieces Top salad with toasted pecans, red onion slices, sunflower seeds, pomegranate arils and goat cheese Drizzle with Sweet Maple Dressing Garnish with Hamama Refreshing Cabbage microgreens Enjoy!
