Roasted Garlic & Veggie Soup

Recipe: Roasted Garlic & Vegetable Soup

Makes: 4-6 Servings

Sometimes it’s nice to whip up a quick & tasty soup with what you have at home. One way to really get the flavors going is roasting not only the garlic, but all the other vegetables. The taste really pops and makes this soup amazing!

Ingredients:

  • 1 Bulb of Garlic 2 medium Onions (chopped)
  • 10- 15 small Potatoes (chopped)
  • 4 Celery Ribs (chopped)
  • 1 bunch Cilantro (chopped)
  • Olive Oil (drizzled)
  • 4-6 cups of Water (broth if preferred)
  • 2 Tbsp Braggs Liquid Amino Acids
  • Fennel Seeds
  • Salt
  • Pepper
  • Hamama Microgreens! - (I chose Cabbage)

 

Instructions:

  1. Preheat the oven to 375. Take all of your vegetables and chop them into decent sized pieces and spread out onto your baking pan. (For the bulb of garlic you just need to cut the top off so the garlic is exposed)

  2. Drizzle olive oil all over the vegetables and mix well so the oil surrounds each veggie.

  3. Once covered in oil add salt, pepper and fennel seeds to the veggies by sprinkling over each one. For the fennel seeds I like to do quite a bit as it gives it really good flavor.

  4. Once the oven is ready you can place the baking pan in for 45 minutes or until the vegetables are golden brown.

  5. Once the veggies are ready you want to get out your big soup pot and drizzle a little more olive oil in there, add your veggies including the chopped Cilantro and start cooking it for a bit. Stir around and let warm up and add in 4-6 cups of water, depending on how thick you want the soup.

  6. Then take your emulsion blender (if you don’t have one use your regular blender) and slower puree your soup until it's to the consistency you want. You can always leave it partially chunky or fully pureed.

  7. I like to let it sit a little longer to really take in all the flavors now that it is pureed. While it’s simmering I like to add in about 2 Tbsp of Braggs Liquid Amino Acids to give it a little extra kick of flavor.

  8. Give it a taste test and see if it needs any more salt or pepper.

  9. Once ready, pour your bowl of soup and add some of your favorite microgreens on top and enjoy!
