Seasoned Sweet Potato Fries with Poached Egg, Greek Yogurt, Green Onions & Kale Microgreens

These crispy seasoned sweet potato fries are sweet and spicy and taste great with a perfectly poached egg! With a delicious runny yolk and the whites just firm enough, this poached egg makes for a fantastic breakfast or brunch. Add in a side of Greek yogurt and your Hamama fresh microgreens and green onions to top it off!

Ingredients:

  • 1 medium to large sweet potato, sliced into wedges
  • 2 tbsp sweet almond oil, drizzle
  • Victoria Gourmet Honey Aleppo Pepper Blend
  • 1 large egg

Garnish:

Instructions:

  1. Preheat the air fryer to 380°F and get out your baking sheet.
  2. Peel and cut your sweet potatoes into wedges and add to your pan.
  3. Add the almond oil and pepper blend and toss with your hands until all of the wedges are fully coated (add in more seasoning and oil if needed).
  4. When your air fryer is ready, make sure your wedges are spread out evenly and place in the air fryer for 12 minutes, turning halfway through to brown on each side.
  5. While your wedges are cooking, you can poach your egg by bringing a large pot of water to boil and then reducing the heat to a low simmer.
  6. Crack your egg into a small bowl or a ladle and place into the water gently.
  7. Turn off the heat and cover the pan. Let cook for 4 minutes. When ready, gently take the egg out with a slotted spoon and set aside.

8. When your potato wedges have finished cooking you can add them to your plate with your poached egg on top, a side of Greek yogurt, kale microgreens, green onions and salt and pepper to taste!
