These delicious shrimp thai lettuce wraps are super satisfying and are packed with flavor. The best part? They take almost no time to make! Make these for a quick lunch or a tasty meal to share with your loved ones. Ingredients: 1 lb raw shrimp, peeled and deveined 1 tbsp olive oil or butter 2 ½ tsp Thai seasoning 1 head of romaine lettuce 1 cup of carrots, julienned 1 cup purple cabbage, chopped finely 1 red bell pepper, julienned 3 tbsp scallions, chopped Peanut Sauce: ¼ cup creamy peanut butter 1 tbsp white miso paste Juice of 1 lime 1 tsp fresh ginger, minced 1 tsp garlic clove, minced 1 tsp maple syrup 1 tsp Sriracha 3-5 tbsp hot water, to create desired consistency Garnish: 1 cup romaine microgreens Black sesame seeds Instructions: Peel and devein the shrimp and place in a bowl. Add the thai seasoning and mix well until each shrimp is well-coated. Add olive oil to a medium-sized skillet over medium heat and add the shrimp. Cook for about 4-5 minutes on each side until pink and slightly crispy. Remove the shrimp from the skillet and set aside to cool. Make the peanut sauce: Add all of the sauce ingredients together and whisk to combine. Assemble the wraps: Place one or two whole pieces of romaine lettuce on a plate. Layer on each vegetable and top off with shrimp, romaine microgreens, black sesame seeds and peanut sauce.
