Spicy Shrimp Salad with Crispy Rice

Looking for an elevated snack to share at your next get-together? These spicy shrimp salad and crispy rice bites are both tasty and pretty! This adorable bite of creamy spicy shrimp salad, crispy rice and refreshing garnish is sure to delight your palate and impress your friends and family.

 

Ingredients:

Crispy Rice:

  • 1½ cup short grain sushi rice
  • 2 tsp mirin
  • 2-4 tbsp coconut oil

 

Spicy Shrimp Salad:

  • ¾ pound large shrimp, peeled, deveined and finely chopped
  • 2 tbsp coconut oil
  • ¼ cup green onions, chopped
  • ¼ cup panko breadcrumbs
  • 3 tbsp vegan mayonnaise
  • 2 tbsp sriracha
  • 1 tsp wasabi paste
  • 1 tbsp jalapeño, chopped
  • 1 tbsp Braggs Amino Acids or soy sauce

 

Garnish:

  • 1 avocado, sliced into pieces
  • Hamama microgreens (I recommend wasabi mustard or spicy radish)
  • 1 jalapeno, thinly sliced and deseeded
  • Sesame seeds
  • 2 tbsp eel sauce and Braggs Amino Acids (or soy sauce) for dipping

Instructions:

Crispy rice:

  1. Start by cooking the rice according to package instructions. When finished cooking, let cool.
  2. Line a loaf pan with plastic wrap. Spread the rice into the pan and press down evenly until tightly packed. Place it in the fridge for at least an hour.
  3. Remove the rice from the fridge and pull it up gently with the plastic wrap. Cut it into 8 even squares.
  4. Heat a medium skillet on medium high, adding in the coconut oil. Cook each piece of rice on both sides for about 3-4 minutes or until golden brown. Set aside.

Shrimp salad:

  1. Place the shrimp into a medium skillet on medium high heat with coconut oil and cook on both sides until cooked through. Set aside and let cool.
  2. Chop the cooled shrimp finely and add to a medium bowl.
  3. Add the breadcrumbs, green onion, jalapeno, mayo, Braggs Amino Acid and sriracha to the bowl and mix to combine.

For serving:

  1. Arrange the crispy rice pieces onto a platter..
  2. Place the avocado slices on top of the crispy rice, followed by the shrimp salad. Garnish with a slice of jalapeno and fresh microgreens.
  3. Dip these delicious spicy shrimp salad and crispy rice bites in eel/soy sauce and enjoy!
