Recipe: Vegan Chard Wraps with Thai Peanut Sauce Author: Carolyn Severin, Hamama Happiness Team Member Prep Time: 10 Minutes Cook Time: 16 Minutes Makes: 6 Servings Chard wraps are light & refreshing, but totally satisfying! Theycan be filled with anything you want! These wraps taste great with just vegetables, or you can add in your favorite protein. This is a great summer dish whether you are at home or want to take them with you on a trip! Ingredients: 6 Chard Leaves (you can do more or less depending on how many people will be eating with you) 1 Cup of Carrots (julienned) 1 Cup of Cucumbers (julienned) 1 Cup of Red Bell Pepper (julienned) 1 Cup of Purple Cabbage (julienned) 1 Cup of Vidalia Onion (chopped thin) 1 Cup Cilantro (chopped) 1 Cup Microgreens (I chose Kale) Tempeh (chopped, you can use other substitutes such as Seitan, Tofu or Meat) Sauce: 1 Tbsp Peanut Butter ¼ Cup Braggs Amino Acids 1 Tsp Vegan Fish Sauce 1 Tbsp Teriyaki Sauce 1 Tbsp Hoisin Sauce 1 Tbsp Sesame Seeds 1 Tsp Olive Oil 1 Inch Fresh Ginger (minced) 1 Tbsp Orange Juice (fresh squeezed, and add more if needed) Instructions: First, take your Swiss Chard leaves and cut off the stems. Bring a large pot of water to boil and place the leaves in there to simmer for 20-30 seconds. I did one at a time. You will want to remove the leaves and gently rinse with cold water and let them dry thoroughly with paper towels. Once done, set aside. 2. Next you will want to julienne the carrots, cabbage, cucumber, red bell pepper and cabbage. Take the rest of your herbs and veggies and chop them as well. Set aside once you are done. 3. Get out your Tempeh next and cut into slices. Take a small pan and turn to medium high heat. Add a little oil to the pan and add your Tempeh. Let it cook for about 5 minutes or until crispy and then flip it over to do the same on the other side. 4. Once your Tempeh is ready, you can sprinkle a little salt on them or a spice you may like and set aside to cool. 5. Take your Thai Peanut Sauce ingredients and combine together until nice and smooth. If needed you can add a little more orange juice in or any others you want. This is super tasty! You can also add some Hamama Green Onions as well. 6. When you have everything ready to go, you can take one of your chard leaves and add a little of each ingredient inside neatly. Fold in the edges of the chard and roll tightly. Repeat with the rest of your chard leaves and filling. 7. When everything is ready to go, you can add a chard wrap to your plate and either drizzle the Thai Peanut Sauce on top or dip it in.
